Ingredients (Approx 1 Litre):

  • 450g Fresh/Frozen Strawberries
  • 250g Sugar
  • 480 ml Double Cream
  • 360 ml Whole Milk 
  • 90g Skim Milk Powder
  • 3 Grams Ice Cream Stabiliser Mix 
  • 1 Vanilla Bean (or 1 Teaspoon Vanilla Paste)
  • 4 Teaspoons Vanilla Extract
  • Pinch of Salt

Recipe:

  • Place strawberries in a bowl and sprinkle 1 cup of sugar over them, tossing to coat evenly. Cover with film and set aside for 6-8 hours.
  • Unwrap the bowl, and they will be sitting in a pool of red, sugary water.
  • Drain through a colander in the sink.

  • Combine milk, skim milk powder, and remaining sugar in a pan and blend until smooth.
  • Add Cream.
  • Put on medium heat, stir often, scraping the bottom to prevent sticking.
  • When it reaches 65°C, add the sugar & stabiliser mix.
  • Cook and stir until it reaches 75°C.
  • Pour through a sieve into a container and chill. Use an ice bath to speed up the process.
  • Add Strawberries puree once cool. Stir to combine.
  • Transfer the base batch freezer and churn to the manufacturer’s recommendation.
