Ingredients (Approx 1 Litre):

  • Soak raisins in rum for as long as possible, ideally overnight.

  • 150g sugar,

  • 60 skim milk, 400 milk,

  • 400 cream,

  • Three tablespoons rum,

  • One teaspoon vanilla extract,

  • 3g ice cream mix.

Too much rum and the ice cream won’t freeze properly, as the alcohol doesn’t freeze. It will sink to the bottom of the container. Play around and see what works for you.

Chocolate Paste Recipe:

  • Mix a little sugar and stabiliser mix.

  • Combine sugar, skimmed milk powder, and milk – ensure it is thoroughly combined and no lumps remain.

  • Stir and add cream.

  • Cook to 65C,

  • Add sugar and stabiliser mix and cook to 75.

  • Remove from heat, add rum, and combine.

  • Add the rum soaked raisins after churning.
