Ingredients:

  • 150g Sugar,
  • 400ml whole milk,
  • 400ml cream,
  • 60g skim milk powder,
  • 3g ice cream mix. 
  • 1.5 teaspoons
  • Peppermint extract.

Recipe:

  • Mix the ice cream stabiliser mix with a little sugar. Set aside.
  • In a pan, add the remaining sugarskim milk powder to the milk.
  • Use a hand blender to ensure it’s fully dissolved and no lumps remain.
  • Stir in the cream.

  • Put on medium heat, stir often, scraping the bottom to prevent sticking.
  • When it reaches 65°C, add the sugar & stabiliser mix.
  • Cook and stir until it reaches 75°C.
  • Pour through a sieve into a container and chill. Use an ice bath to speed up the process.
  • Add peppermint extract (adjust to taste) before churning.
  • Follow the manufacturer’s guidelines for churning your ice cream.
