Ingredients (Approx 1 Litre):

  • 250 ml coconut milk,

  • 250 ml cashew milk,

  • 175 g sugar,

  • 60 g brown sugar,

  • 70 g cocoa butter,

  • 70 g extra virgin coconut oil,

  • 160 g roasted bananas,

  • Sorbet texture improver.

Recipe:

  • Preheat the oven to 392 F (200C),

  • Line a sheet and toss the sliced bananas with 60 g dark brown sugar and a pinch of salt.

  • Bake for 10-15 mins until caramelised.

     

  • Pour milk into the container.

  • Combine sugar and 60 g water,

  • Heat until melted,

  • Stir in cocoa butter and coconut oil and heat until melted.

  • Pour roasted banana into milk mix and blend well.

  • Chill and freeze in the ice cream machine.
