Banana and nutella banatella ice cream recipe

Ingredients (Approx 1 Litre):

  • 360 ml milk,
  • 480 ml cream
  • 90 skim milk,
  • 150 cane sugar,
  • 1 teaspoon vanilla extract,
  • 1 teaspoon cinnamon,
  • 455 g ripe banana,
  • 3g stabilizer mix.

Recipe:

  • Add a little sugar to the stabilizer mix and set aside

  • Combine milk, skim milk powder, sugar, vanilla, cinnamon, and bananas and blend until smooth.

  • Add cream and stir to combine.

  • Cook to 65C.

  • Add the stabiliser and sugar mix,

  • Cook to 75C

  • Churn in the ice cream machine.

Nutella swirl for 1 batch

  • 90 g Nutella,
  • 30ml cream
    whisk Nutella and cream, should pour off the spoon like honey!
  • Add to ice cream, heap in spoonfuls, lift and spin; don’t over-mix.
