1. Quality Ingredients for Rich Flavors:

Begin with a base of sugar and skim milk powder, which provides the sweetness and smooth texture essential to ice cream. Add whole milk and heavy cream for a rich and creamy consistency. The star ingredient, of Belgian-style white ale, introduces a unique beer flavor with fruity and sweet notes.

2. Preparing the Ice Cream Base:

Start by dissolving the skim milk powder, whole milk, and sugar in a large pot. This mixture forms the foundation of your ice cream. Next, combine the heavy cream thoroughly with the milk mixture. The cream adds richness and helps balance the beer’s flavour.

3. Cooking to the Right Temperature:

Heat the mixture to 65°C, then add the stabilizer mix. The stabilizer ensures a smooth, consistent texture in the finished ice cream and allows for an egg-free ice cream recipe. Continue cooking the mixture until it reaches 75°C. This cooking process is crucial for pasteurizing the ice cream base and developing a perfect texture.

4. Adding the Belgian White Ale:

Once the base reaches the correct temperature, please remove it from the heat and stir in the Belgian white ale. The beer should be incorporated thoroughly to ensure its flavours meld seamlessly with the creamy base.

5. Chilling and Churning:

Chill the beer-infused ice cream base in the refrigerator. Once it’s completely cool, churn it in an ice cream maker according to the manufacturer’s instructions. Churning aerates the mixture, contributing to a light and creamy texture.

6. Freezing to Perfection:

After churning, transfer the ice cream to a freezer-safe container and freeze until it reaches your desired consistency. This step is crucial for achieving the perfect scoopable texture.
