Ingredients:

1 lemon

2 cups of blueberries

1/3 cup sugar

Recipe:

 

Finely grate the zest of the lemon into a pan.

Juice lemon into a bowl and set aside.

Add 1 ½ cups of blueberries and sugar to the pan and put over medium-high heat.

Cook until most of the berries have popped and the juice they release has thickened slightly – 6-8 minutes.

Remove from heat and stir in remaining berries and juice.

Serve warm or transfer to a container.
