720 ml whole milk,
400 ml cream,
150 g sugar,
60 g skim milk powder,

Use a hand mixer to whisk until smooth. Make sure it is fully dissolved.
Stir in cream.
Put on medium heat, stir often, scraping the bottom to prevent sticking.
When it reaches 65°C, add the sugar stabilizer mix.
Cook and stir until it reaches 75°C.
Pour through the sieve and store.
