150g Sugar,
400ml whole milk,
400ml cream,
60g skim milk powder,
3g ice cream mix,
pinch of salt
15 whole black peppercorns,
10 whole cloves,
7 cardamon pods, half a cinnamon stick,
2 star anise,
170g milk choc chopped.
Toast spices in pan for 2-3 mins until aromatic.
Mix ice cream mix with some sugar.
Add sugar, skim milk powder, and salt to milk.
Use a hand blender to ensure it’s fully dissolved and no lumps remain.
Stir in cream and toasted spices.
Add chopped chocolate (make sure to mix and dissolve)
Put on medium heat, stir often, scraping the bottom to prevent sticking.
When it reaches 65°C, add the sugar and stabiliser mix.
Cook and stir until it reaches 75°C.
Pour through a sieve (make sure spices are removed) into a container and chill.
