Peppermint Patties:

  • 1/2 semisweet choc chips,
  • 2 tablespoons unsalted butter,
  • 2 tablespoons evaporated milk,
  • 2 tablespoons corn syrup,
  • 2 cups icing sugar,
  • 2 drops peppermint oil,
  • 6 drops of red or green food colouring if you want.

Ice Cream:

  • 150g sugar,
  • 60g skim milk powder (sifted),
  • 400 ml whole milk,
  • 400 ml cream,
  • 3 g ice stabilizer cream mix,
  • 1 teaspoon vanilla extract, 
  • 90 g cocoa powder (Dutch) sifted,
  • A couple of drops of high-quality peppermint oil extract.

Peppermint Patties Recipe:

  • Line a tin with parchment paper,
  • Melt the chocolate on the hob on low heat,
  • Spoon half the chocolate onto the prepared tin and spread as thin as possible,
  • Let cool until it’s hardened.
  • Mix butter, milk and syrup in a separate saucepan and warm over low -until butter is completely melted,
  • Remove from heat and add half the icing sugar,
  • Stir until smooth,
  • Add the peppermint oil and colouring if using. And remaining icing sugar.
  • Spread peppermint paste over chocolate, then spread the remaining chocolate on top,
  • Freeze for an hour. (Alternatively, add all the paste to the pan and all the chocolate on top. )
  • Chop and mix into ice cream.

  • Add a little sugar to the ice stabilizer cream mix and set aside,
  • In a pan, combine sugar, skimmed milk powder, cocoa powder and milk,
  • Use a hand mixer to combine,
  • Make sure no lumps remain,
  • Stir in cream,
  • Put on medium heat and stir often.
  • At 65°C, add sugar stabilizer, mix, and blend,
  • Cook to 75°C.
  • Remove from heat and stir in vanilla,
  • Strain through a sieve and chill,
  • Add the peppermint extract before churning. Add drops to your preferred taste.
