Ingredients (Approx 1 Litre):

  • 150g Sugar
  • 400 ml Double Cream
  • 480 ml Whole Milk 
  • 60 Grams Skim Milk Powder
  • 3 Grams Ice Cream Stabiliser Mix 
  • 75g coarsely ground coffee 

Recipe:

  • Mix a little sugar with the ice cream stabiliser mix and set aside.
  • Heat milk until it starts to steam.
  • Remove from heat and stir in coffee.
  • Cover and let steep for 10 minutes; the longer you leave it, the stronger the flavour will become.
  • Pour the mixture into a bowl through a cheesecloth-lined wire mesh strainer.
  • Return the coffee milk to the saucepan.
  • Add the sugar and skim milk powder. Stir with a hand mixer until smooth.
  • Stir in cream.

  • Put on medium heat, stir often, scraping the bottom to prevent sticking.
  • When it reaches 65°C, add the sugar and stabiliser mix.
  • Cook and stir until it reaches 75°C.
  • Pour through a sieve into a container and chill.
