Ingredients (Approx 1 Litre):

  • 4 cups packed and mashed raspberries. Frozen can work if more accessible

  • 6 tablespoon golden syrup

  • Pinch of salt

  • 1/2 cup 1:1 simple syrup 

  • Texture improver (as instructions). Not 100% needed but will make for a softer scooping end product.

     

Recipe:

  • Puree raspberries until smooth. Strain puree into a bowl, pressing on solids, and discard solids in the strainer.

  • Add syrup, salt, and simple syrup to the raspberry and mix. Add texture improver.

  • The base should taste just a bit too sweet

  • Freeze in the machine.
