150 g sugar,
60 g skim milk powder,
400 ml whole milk,
400 ml cream,
10 eggs yolks,
2 tablespoons rum,
2 teaspoon vanilla extract,
1/2 teaspoon nutmeg,
1/2 teaspoon cinnamon,
3 g ice cream mix.
Add a little sugar to the stabilizer mix and set aside,
Combine sugar, skim milk powder, and milk, whisk and combine thoroughly,
Stir in cream,
Cook to 113 F (45C).
Slowly pour some of the hot mix into egg yolks to temper and tip back into the mix,
Cook to 65 C, add stabilizer mix and cook to 75C,
Remove heat and add rum, vanilla, nutmeg and cinnamon. Mix.
Pour through the sieve and chill.
Churn in your ice cream machine according to manufacturer recommendations.
