150 g Sugar,
400 ml whole milk,
400 ml cream,
60 g skim milk powder,
3 g ice cream mix,
1/2 teaspoon almond extract,
1/2 teaspoon vanilla extract,
1 teaspoon dark rum,
1 cup gingerbread cookie
5 tablespoons unsalted butter,
1/2 cup light brown sugar,
2 large eggs,
2 tablespoons of molasses(or corn syrup),
1 cup all-purpose flour,
1/2 teaspoon bicarb,
1/2 teaspoon cinnamon,
1/8 teaspoon ginger,
1/8 teaspoon allspice,
1/8 teaspoon salt.
Heat oven to 175.
Line baking pan.
In a mixer, cream butter and sugar,
Add eggs and corn syrup and mix low until incorporated,
Whisk flour, bicarb, cinnamon, ginger, allspice, and salt in a separate bowl,
Add to the wet mix. Mix until just combined.
Spread an even layer, and bake for about 30 minutes. Use a knife to poke into the dough, and it should come out clear,
Cool and chop to use.
Mix the ice cream stabilizer mix with a bit of sugar. Set aside.
In a pan, add the remaining sugar, skim milk powder, vanilla bean/paste, and salt to the milk.
Use a hand blender to ensure it’s fully dissolved and no lumps remain.
Stir in the cream.
Put on medium heat, stir often, scraping the bottom to prevent sticking,
When it reaches 65°C, add the sugar & stabilizer mix,
Cook and stir until it reaches 75°C.
Pour through a sieve into a container and chill. Use an ice bath to speed up the process.
Add vanilla extract, almond extract and rum before churning.
