Ingredients (Approx 1 Litre):

  • 150g Sugar
  • 400 ml Double Cream
  • 400 ml Whole Milk 
  • 60 Grams Skim Milk Powder
  • 3 Grams Ice Cream Stabiliser Mix 
  • 1 Vanilla Bean (or 1 Teaspoon Vanilla Paste)
  • 4 Teaspoons Vanilla Extract
  • Pinch of Salt

Honeycomb:

  • 100g Sugar
  • 15 ml Honey
  • 2 Teaspoon Golden Syrup
  • 1 Tablespoon Bicarbonate Soda

Recipe:

  • Mix the ice cream stabiliser mix with a little sugar. Set aside.
  • In a pan, add the remaining sugar, skim milk powder, vanilla bean/paste, and salt to the milk.
  • Use a hand blender to ensure it’s fully dissolved and no lumps remain.
  • Stir in the cream.
  • Put on medium heat, stir often, scraping the bottom to prevent sticking.
  • When it reaches 65°C, add the sugar & stabiliser mix.
  • Cook and stir until it reaches 75°C.
  • Pour through a sieve into a container and chill. Use an ice bath to speed up the process.
  • Add vanilla extract before churning. Follow the manufacturer’s guidelines for churning your ice cream.

 

  • To make honeycomb:

  • Butter and line baking sheet
  • Combine sugar, honey, syrup, and 40ml of water and whisk to combine.
  • Cook medium-high until 150C
  • Remove from heat, whisk in bicarb vigorously for a few moments to ensure it’s incorporated.
  • Let it grow; when it stops, pour it onto a baking sheet, cool it, and refrigerate it for 30 mins.
  • Chop into small bits and add to ice cream.
