Lemon Drizzle Traybake

Easy lemon drizzle tray bake recipe

Ingredients:

225g (8 oz) butter, softened

225g (8 oz) caster sugar

275g (10 oz) self-raising flour

2 teaspoons baking powder

4 eggs

4 tablespoons milk

Finely grated rind of 2 lemons

CRUNCHY TOPPING

175g (6 oz) granulated sugar

Juice of 2 lemons

EQUIPMENT

A traybake or roasting tin 30 x 23 x 4 cm (12 x 9 x 1 ½ inches)

Recipe:

Cut a rectangle of non-stick baking parchment to fit the base and sides of a traybake tin or roasting tin, 30 x 23 x 4 cm. Grease the tin and then line it with the paper, pushing it neatly into the corners.

Preheat the oven to 160°C/325°F/Gas 3.

Measure all the ingredients for the traybake into a large bowl and beat well for about 2 minutes until well blended.

Turn the mixture into the prepared tin.

Level the top gently with the back of the spatula.

Bake in the middle of the preheated oven for about 35-40 minutes or until the traybake springs back when pressed lightly with a finger in the centre and is beginning to shrink away from the sides of the tin.

Allow the traybake to cool in the tin for a few minutes, then lift the traybake out of the tin still in the lining paper.

Carefully remove the paper and put the traybake onto a wire rack placed over a tray (to catch drips of the topping).

To make the crunchy topping, mix the lemon juice and granulated sugar in a small bowl to give a runny consistency.

Spoon this mixture evenly over the traybake whilst it is still just warm.

Cut into about squares when cold.

It can be stored in an airtight container for 3-4 days and frozen for up to a month.

Follow this guide to bake a Lemon Drizzle Traybake that’s sure to be a hit at any gathering.

1. Preparing Your Traybake Tin:

Prepare your traybake or roasting tin (30 x 23 x 4 cm). Line it with non-stick baking parchment, ensuring it covers the base and sides neatly. This preparation is vital for easy removal of the cake and even baking.

2. Crafting the Sponge Cake:

The base of this traybake is a soft, lemon-infused sponge cake. Cream together softened butter and caster sugar, then add self-raising flour, baking powder, eggs, milk, and the finely grated rind of two lemons. This blend of ingredients creates a light, fluffy cake with a delightful lemon aroma.

3. Baking to Perfection:

Pour the batter into your prepared tin, smoothing the top gently. Bake in a preheated oven at 160°C for about 35-40 minutes. The cake is done when it springs back to the touch and pulls away from the tin’s sides. Let it cool slightly in the tin before transferring to a wire rack.

4. The Lemon Drizzle:

Mix lemon juice with granulated sugar for the signature lemon drizzle to create a runny, crunchy topping. Spoon this mixture over the top while the cake is still warm, allowing it to absorb the syrup and leave a sugary crust. This step adds a burst of lemon flavor and a delightful crunch to every bite.

5. Serving and Storage:

Once completely cooled, cut the traybake into squares. This Lemon Drizzle Traybake can be stored in an airtight container for 3-4 days, making it perfect for advance preparation. It can also be frozen for up to a month, ensuring you have a delicious treat whenever needed.
