The quality of its ingredients. To ensure a vibrant, natural lemon flavor, use fresh, ripe lemons for the juice and zest. Bottled lemon juice can be used; use a good quality one. Combine this with whole milk, heavy cream, and sugar to create a balanced and creamy base that complements the lemon’s sharpness.
Begin by zesting and juicing your lemons. The zest will infuse the milk with a deep lemon flavor, and the juice will add that unmistakable tartness characteristic of lemon desserts. Mix the lemon zest with the sugar to release the oils and enhance the flavor.
Heat the milk gently with the lemon-infused sugar, stirring until the sugar dissolves completely. Allow this mixture to cool slightly before adding the lemon juice and heavy cream. The acidity of the lemon juice will brighten the creamy base, creating a harmonious blend of flavors.
Chill the ice cream base thoroughly in the refrigerator. Once cooled, churn the mixture in an ice cream maker according to the manufacturer’s instructions. Churning is essential for incorporating air into the ice cream, resulting in a light and creamy texture.
After churning, transfer the lemon ice cream to a freezer-safe container and freeze until it reaches your desired consistency. This step lets the flavours meld together and the ice cream firm up, ensuring a smooth and refreshing scoop every time.
Serve your Lemon Ice Cream in bowls or cones, garnished with additional lemon zest or a sprig of fresh mint for an extra touch of elegance. This ice cream is an ideal treat for any occasion, offering a deliciously tangy and creamy dessert option that’s sure to please.
