Ingredients (Approx 1 Litre):

  • 150 g Sugar
  • 400 ml Double Cream
  • 400 ml Whole Milk 
  • 90 g Skimmed Milk Powder
  • 3 Grams Ice Cream Stabiliser Mix 
  • 100 g peanut butter
  • 1 cup of jam

Recipe:

  • Mix ice cream mix with some sugar.
    Add skim milk powder to the milk.
  • Use a hand blender to make sure it’s fully dissolved and no lumps remain.
  • Stir in cream.
  • Put on medium heat, stir often, scraping the bottom to prevent sticking.
  • When it reaches 65°C, add the sugar mix.
  • Cook and stir until it reaches 75°C.
  • Pour through a sieve into a container with the peanut butter in and chill.
  • Add heaps of jam as it exits the batch freezer, and use a chopstick to swirl the mixture. Careful not to over-mix
